Ingredients:450g baby potatoes
2 tablespoons Big Deez Smoky Vegan Mayo
1 tablespoon rapeseed oil
handful of parsley and dill, finely chopped
Preheat oven to Gas Mark 7/ 218°C/425°F
With a sharp knife finely slice each potato across their width, but do not cut straight through.
Place potatoes on a baking tray, coat potatoes with oil and bake for 40 minutes or until golden and cooked through.
Top each potato with a dollop of Smoky Vegan Mayo and sprinkle over the herbs. Serve.
